makes 3 loaves
Bake your favorite squash by cutting in half, scooping out seeds and roasting until very soft. Cool and scoop out pulp.
Sift dry ingredients together. Combine oil and sugar. Beat in eggs one at a time blending well after each egg. Blend squash into the creamed mixture. Add the flour mixture alternately with the water. Divide into 3 loaf pans. Bake at 350 degrees for 45 minutes.
Serve warm with butter, apple butter or plain!!
Variations and notes:
Add pecans or walnuts to batter. Loaves may be made ahead of time and frozen for future use. May be divided into muffin tins- fill muffin cups half full and adjust baking time down to 30 minutes.
