Recipes

Sweet Potato Biscuits

  • 3 cups in all* All purpose flour
  • 1/3 c. Shortening
  • 1 c. Mashed sweet potato
  • 1/2 tsp. Baking soda
  • 1 c. Buttermilk
  • 2 tsp. Baking powder
  • 1 tsp. Salt
  • ½ tsp. Cinnamon
  • ½ tsp. Nutmeg

Preheat oven to 350. Place sweet potato in oven and bake until soft, remove, cool and peel. Mash sweet potato with fork until smooth. Sift together 2 cups flour, soda, baking powder with salt and spices. Work shortening into flour until crumbly and the shortening forms pea sized balls. Whisk potato and buttermilk together. Add to flour mixture. Work flour into a ball. Raise oven temperature to 400. Turn out onto floured surface and knead for 5 minutes until mixture is soft dough. If needed add more flour until it is no longer sticky roll out to ½ inch thick. Use cutter cut to desired size and place on un-greased baking sheet. Bake 12 minutes or until browned. Serve with butter and molasses.

* Depending on moisture content of potato more flour may be necessary
