Summer Tomato and Sweet Onion Salad on Marinated Cucumber, Summer Truffles, Reggiano Cheese

Serves 4 people

  • • 1 medium Vine ripe summer red tomato
  • • 1 medium Vine ripe summer Yellow tomato
  • • 1 medium Vidalia Onion
  • • 1 small Cucumber
  • • 2 oz Shaved Reggiano Cheese
  • • 1 small Summer Black Truffle (optional)
  • • ½ cup White wine vinegar
  • • ¼ cup Virgin Olive oil
  • • 4 leaves Basil
  • • ¼ cup granulated Sugar
  • • 1 pinch Salt
  • • 1 pinch Pepper

1. Combine Vinegar, sugar, salt and pepper
2. Wash and thin slice cucumbers and Onions, add to vinegar mixture, toss to coat
3. Let marinate for 1-2 hours
4. Medium dice red and yellow tomatoes and place in bowl
5. Add small amount of vinegar marinate to tomatoes, add olive oil, salt, pepper and chopped basil.
6. On plate: fan cucumber slices in circular shape
7. Place marinated tomatoes in center of circular shape
8. Place 2 shaved pieces of Reggiano cheese
9. Drizzle with vinegar mixture
10. Garnish with thin shaved truffles
