Recipes

Pumpkin Quick bread with pecans

  • 1-1/2 c all purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1-cup sugar
  • 1-cup pumpkin, roasted
  • ½ cup shortening
  • 2 eggs
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 1/8 tsp cloves, ground
  • ¼ cup milk
  • ½ cup chopped toasted pecans

Preheat oven to 350. Grease a loaf pan and set aside.

Mix all dry ingredients together and set aside. Cream eggs and shortening together with sugar until well whipped. Stir in pumpkin. Slowly add dry ingredients. Mix until barely incorporated, do not over mix. Slowly stir in milk and pecans. When just incorporated fill loaf pan and bake for approximately 45 minutes or until a knife inserted into center comes out clean. Cool slightly and serve with warm butter.

May be used in muffin tins as well, cut baking time down to 25-30 minutes.
