Pumpkin Pie

  • 1 9-inch deep dish pie crust
  • 3 cups roasted pureed pumpkin
  • 18 oz evaporated milk
  • 4 large eggs
  • 1 cup sugar
  • 1.5 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. ground allspice
  • 1/2 tsp. ground ginger
  • 1/2 tsp. of vanilla extract
  • 1/2 tsp. salt

Cut a pie pumpkin in half, scoop out seeds. Place on a baking sheet cut side down and roast at 350 until soft. remove, cool and scoop out pulp and mash well or place in a food processor and process until smooth.

Add pumpkin, sugar, eggs and milk into a bowl and mix well. Add spices, and blend thoroughly. Preheat oven to 425. pour pie mixture into crust, bake at 425 for 15 minutes. Turn oven temperature down to 350 and bake for 45 more minutes.
