Marinated cucumber salad with Tomatoes and mozzarella

Serves 4

  • 2 cucumbers sliced
  • ½ small white onion julienne
  • ½ cup white vinegar
  • ¼ cup sugar
  • 4 tomatoes, preferably different varieties
  • 2 sprigs Basil
  • 8 oz fresh mozzarella
  • 3 oz Arugula Greens
  • ½ cup extra virgin olive oil
  • Salt and pepper to Taste

Make a Dressing with Vinegar, sugar, salt and pepper, place sliced cucumbers and onions in dressing and refrigerate for an hour. Meanwhile, dice tomatoes and mozzarella and toss with basil and olive oil, salt and pepper to taste.
Arrange sliced cucumbers on plate, add marinated onions to tomato mixture mound tomato and mozzarella mixture over the top of cucumbers and garnish with arugula.
