Add berries, water and sugar to a medium sauce pot. Boil for 2-3 minutes to cook sugar. Remove and cool. Add berries and yogurt to blender, blend until smooth. This may need to be done in batches. Add lime juice, mint and cream. Stir well, chill thoroughly. Ladle into bowls and finish off with options below, and a sprig of fresh mint.
For Strawberry sauce or balsamic syrup swirls for garnish:
Add vinegar and sugar to small sauce pot, boil until reduced by 2/3 and syrupy. Cool. And drizzle over the top of your soup after it is in the bowl
Blend berries and sugar in blender until smooth, bring to a boil for 5 minutes and cool.
Drizzle over finished soup as with vinegar.
