Celeriac Mash Potatoes

  • 1lb organic Yukon gold or other potato
  • 1-pound celery root peeled
  • 2 tbs. butter
  • 1 cup milk
  • Salt and pepper to taste
  • 1 tsp rosemary

Wash potatoes well. If using Yukon or red potatoes do not peel. Peel celery root and cut roughly to size of potatoes. Cover in water and boil until fork tender, Approximately 20 minutes. Drain and add butter, milk rosemary salt and pepper. Mash well or blend in mixer.
