Baked sweet potato with molasses butter

Serves 4

  • 4 N.C Sweet Potatoes, washed
  • 4 oz. (1 stick) whole butter softened
  • 3 tbs molasses
  • ¼ tsp. nutmeg
  • ¼ tsp. cinnamon
  • ½ tsp salt
  • ½ tsp. pepper

Bake sweet potatoes skin on. In mixing bowl add butter molasses, spices, salt and pepper. Whip thoroughly. Refrigerate for 15 minutes. Cut open sweet potatoes, spoon in butter and serve immediately.
